Chicken Puttanesca (Print this)

1 lb boneless skinless chicken
2 tsp olive oil
1 white onion
12 clove garlic
2 oz anchovy fillets
2 8 oz chopped tomatoes
4 oz kalamata olives
4 oz capers
3 tbsp sun dried tomatoes chopped
1 tbsp Italian herbs
1 tbsp balsamic vinegar
╝ tsp salt
0.12 tsp crushed red pepper
12 oz linguine cooked

1)Trim chicken of fat and cut into
1 inch pieces
2)Dice onion and mince garlic
cloves. Drain and chop anchovies
3)Heat oil in a large skillet.
SautÚ the onion and garlic 3-5
minutes until the onion is soft
4)Add the chicken and sautÚ an
additional 2 minutes until
seared on all sides. Add the
remaining ingredients (except
the pasta), reduce to a low
flame and simmer until combined,
approximately 30 minutes. Serve
over the prepared pasta.
