Chocolate Souffle - from Chez Melange! (Print this)
Chocolate Souffle

Yield 4-5 Souffles

Base

Milk 1 1/2 Cups
Vanilla Bean 1
Cornstarch 3 tsp
Sugar 1/2 Cup
Cocoa 6 tsp
Egg Yolks 6

For Service

Egg Whites 5 each
Sugar 1 tsp



Bring the milk to boil. While the milk is heating, combine the second set of ingredients to make a paste. Add the paste to the boiling mild. Constantly stir and cook over medium heat until mixture thickens. About 1 minute. Remove from the heat, and spread onto a small sheet pan to cool. While the mixture cools, whip the egg whites with the second measure of sugar. Whip to firm peaks. Combine the souffle base and the egg whites.

Fill the buttered and sugared ramekins with the souffle mixture. Bake at 400 degrees for about 25-30 minutes until doubled in volume.

Serve immediately and sprinkle with powdered sugar. Serve with chocolate Ganache sauce.
