Mustard Herb Shallot Dressing - from Chez Melange! (Print this)

1 Egg Yolk
1 tsp. Dijon Mustard
2 Tbs Apple Cider Vinegar
1 Tbs Shallots - minced
6 oz Virgin Olive Old
6 Tbs chopped herbs- vary with basil, parsley, rosemary, thyme, oregano, etc.

Place egg yolk, mustard, vinegar, and shallots in a small mixing bowl. Whisk until creamy & together.

While whisking, very slowly add the oil drop by drop at first. Increase to a small steady stream while always whisking.

Add chopped herbs, and salt and pepper to taste.

Let stand a half hour or so for flavors to bloom.
