Chez Melange Cooking Class for 1800 PCH

Did you miss out on the special '1800 PCH' cooking class at Chez Melange put together by Vicki Goorchenko and Michael Franks in October? Or did you attend but can't find the recipes now? No worries! Here are all of the recipes from that night. (If you want to see the photos from the class, click on Neighborhood Pictures just to the left of this!)
Marinara Sauce
28 oz. Canned, diced tomatoes in juice
1 medium yellow onion diced
5-6 large cloves garlic, peeled and diced
3-4 dried bay leaves
3-4 stems fresh basil leaves (chopped)
4-5 stems fresh oregano leaves (chopped)
1/2 cup extra virgin olive oil
salt and pepper to taste

Saute onion and garlic in oil til soft (wine optional)- reduce to half.

Add canned tomotoes (fresh can be used).

Stir together, simmer, and stir periodically.

Cook approx. 1-2 hours with bay leaves.

Add herbs last 15 minutes.
