Chez Melange Cooking Class for 1800 PCH

Did you miss out on the special '1800 PCH' cooking class at Chez Melange put together by Vicki Goorchenko and Michael Franks in October? Or did you attend but can't find the recipes now? No worries! Here are all of the recipes from that night. (If you want to see the photos from the class, click on Neighborhood Pictures just to the left of this!)
Valrhona Chocolate Cake
6 each egg yolks and 3 whole eggs
1/2 cup sugar
1/2 pound valrhona bittersweet chocolate chips or other good quality chocolate
4 ounces sweet butter
2 tablespoons flour
Ten 4- ounce foil tins

Whip yolks and whole eggs with sugar to ribbon stage with electric mixer or 5 quart mixer with whip. (Ribbon stage: when you stop beating, the peaks stay up for 3 seconds.)

Then melt the chocolate and butter together in a double broiler.

Fold egg and chocolate mixtures together

Sift flour while folding.

Butter and flour foil tins, bottom and sides.

Fill with mixture and bake at 375 degrees for 10-12 minutes.

Yield 9-10 Four oz. tins.

Serve with fresh whipped cream and berries.
