Chez Melange Cooking Class for 1800 PCH

Did you miss out on the special '1800 PCH' cooking class at Chez Melange put together by Vicki Goorchenko and Michael Franks in October? Or did you attend but can't find the recipes now? No worries! Here are all of the recipes from that night. (If you want to see the photos from the class, click on Neighborhood Pictures just to the left of this!)
Mustard Herb Shallot Dressing
1 Egg Yolk
1 tsp. Dijon Mustard w/ seeds
2 Tbs Apple Cider Vinegar (or your favorite vinegar)
1 Tbs Shallots - minced
6 oz Virgin Olive Old
1 Tbs chopped herbs- vary with basil, parsley, rosemary, thyme, oregano, etc.

Place egg yolk, mustard, vinegar, and shallots in a small mixing bowl. Whisk until creamy &emulsified.

While whisking, very slowly add the oil drop by drop at first. Increase to a small steady stream while always whisking.

Add chopped herbs, and salt and pepper to taste.

Let stand a half hour or so for flavors to bloom.
