Chez Melange Cooking Class for 1800 PCH

Did you miss out on the special '1800 PCH' cooking class at Chez Melange put together by Vicki Goorchenko and Michael Franks in October? Or did you attend but can't find the recipes now? No worries! Here are all of the recipes from that night. (If you want to see the photos from the class, click on Neighborhood Pictures just to the left of this!)
Quickly Braised White Beans
One 15 oz. can Cannellini Beans (or Great Northern)
4-6oz. Chicken Stock
4 oz. Mirepoix (carrots, celery, onions), small dice
3 ea. leaves of Sage
1 Tbsp. Extra Virgin Olive Oil
Salt and Pepper to taste

Empty can of beans and rinse under cold water.
Put Olive Oil in sauce pan- heat.
Cook Mirepoix in Olive Oil until soft.
Add Beans, mix in well.
Add Stock- bring up to heat (don't make too soupy!).
Cook down til thick.
Add sage at the end.

Saute shrimp in Olive Oil, Garlic, and fresh Rosemary- serve on top of beans.
